I knew I was on to something when my middle schooler started getting excited about all the possibilities with overnight oats. After loving mango overnight oats in the summer, she suggested apple cinnamon for Fall. Her next request involves chocolate and coffee (decaf for her, lol), so stay tuned!
For this recipe, I suggest grating the apple instead of chopping it. It blends right into the oats and adds plenty of fresh apple flavor. And if you love the crisp texture of apples, simply top your oats with some chopped apple just before serving.
While I do love everything about apple cinnamon baked oatmeal, I don't always have the time to make it. The next best thing? Apple Cinnamon Overnight Oats! They're incredibly delicious, easy to prep, and such a time saver on busy mornings!

Ingredient Notes

- Apple I like to use Honeycrisp apples, but any sweet apple will work just as well. Or, for more of an apple pie flavor, use a granny smith apple.
- Oats Use old fashioned oats (also known as rolled oats). Don't use quick oats or steel cut oats. Oats are a great source of fiber and protein.
- Chia Seeds When chia seeds absorb liquid, they help balance out the texture of oats. Chia seeds contain fiber, protein, and omega-3 fatty acids.
- Milk While you can use any kind of milk (including non-dairy), I like to use 2% milk to make this recipe. Milk is a great source of protein and calcium.
- Maple Syrup Use pure maple syrup. Can use brown sugar instead.
- Cinnamon The best compliment to apples and oats. My youngest daughter prefers even more cinnamon, so feel free to add another dash or two of cinnamon just before serving.
How to Make Apple Cinnamon Overnight Oats

- Use a hand grater to grate the apple.
- Mix all ingredients in a jar.
- Place lid on jar and refrigerate until ready to serve.

Apple Cinnamon Overnight Oats
Equipment
- 1 grater
Ingredients
- ½ small apple about one half cup grated. skin on.
- ½ cup old fashioned oats rolled oats
- 2 teaspoon chia seeds
- ½ cup milk 2% or whole milk
- 2 teaspoon maple syrup pure maple syrup
- 1 teaspoon cinnamon
Instructions
- Grate half of an apple.½ small apple
- Add all ingredients to a jar. Stir well.½ cup old fashioned oats, 2 tsp chia seeds, ½ cup milk, 2 tsp maple syrup, 1 tsp cinnamon, ½ small apple
- Place lid on jar and let it sit in the refrigerator for at least 4 hours, preferably overnight. Serve and enjoy!
Notes
- I prefer to use a Honeycrisp apple to make this recipe, but feel free to use any kind of apple you have on hand.
- Store refrigerated for up to 3-4 days.
- Overnight oats can be served cold or warm.
- Top with chopped apple before serving for more of a crisp apple texture in your oats.
