    The most delicious Mini Banana Pancakes are made with oats, whole grain flour, and no added sugar! A lifesaver on busy mornings!

    Bite-sized pancakes for the win! I don't know about you, but sometimes I have to get creative with how I serve things in order for my kids to really appreciate them.

    And I'm always looking for new ways to use up the overripe bananas sitting on my counter. You know, the ones with all of the brown spots that no one wants to eat 😉

    Whether it's banana cocoa cookies, a banana smoothie, or banana pancakes, I'm here for it all! Hey, I even make banana milkshakes! 🍌

    As for this banana pancake recipe, I decided to make them mini-sized... because, why not? 🤩 And like I do when I make my dairy-free banana bread recipe, sometimes I add a few mini chocolate chips for my kids. So good!

    Brief notes on a few key ingredients needed to make this banana pancake recipe:

    1. Banana One-and-a-half overripe bananas. If you use one banana, you won't really notice the banana flavor and if you use two bananas the banana flavor will be too strong. And if you happen to have a ripe banana, slice it separately. Serve banana slices with the mini pancakes for even more banana flavor. It's so good this way!
    2. Quick Oats Quick oats are rolled thinner than rolled oats, so they absorb liquid faster than whole oats. They work well for pancake batter. Oats are a good source of protein, fiber, and a variety of other nutrients.
    3. White Whole Wheat Flour Also known as Golden Wheat Flour, is a whole-grain flour. All-purpose flour can be used instead.

    How to Make Mini Banana Pancakes

    1. Mash the banana in a medium bowl.
    2. Add the remainder of the ingredients in the order listed. Mix well.
    3. Pour one tablespoon of the pancake batter per pancake onto a hot large nonstick skillet or square griddle pan on medium heat.
    4. Cook for one to two minutes on each side. They will have a golden brown color when finished cooking. Serve the cooked pancakes right away, while they are still warm.

    Helpful Tips

    • Reduce to medium-low heat if the mini banana pancakes are cooking too fast.
    • Using two skillets to cook more pancakes at once saves so much time.
    • There is no added sugar, so they are mildly sweet. Feel free to stir a tablespoon of pure maple syrup into the batter if you prefer sweet pancakes.
    • Serve mini pancakes with slices of banana or berries, a side of nut butter or sliced almonds, and a drizzle of maple syrup, a smear of honey, or a dusting of powdered sugar.

    Are banana pancakes healthier than regular pancakes?

    I think so! Bananas are an excellent source of nutrients like fiber and potassium. And because overripe bananas have natural sweetness, you don't have to add as much sugar to the pancake mix to make them taste good 🙂

    Do mini pancakes freeze well?

    Yes! These mini banana pancakes freeze very well. I use my air fryer to reheat them from frozen (300 degrees for 5 minutes). Otherwise, I let them defrost in the fridge overnight.

    Can I make regular banana pancakes instead of mini pancakes?

    Yes, absolutely. I've made regular sized and mini pancakes using this same banana pancake batter.

    Is it better to use baking soda or baking powder to make pancakes?

    In my opinion, it's better to use baking powder. Pancakes made with baking powder taste much better than when made with baking soda.

    Equipment

    • 2 square griddle pans or large skillets
    • 1 mini spatula
    • 1 measuring cups and spoons set
    • 1 Mixing bowl medium

    Ingredients
      

    • 1½ banana very ripe or overripe. The peel should have brown spots.
    • ½ cup quick oats not whole rolled oats
    • ¾ cup milk I use skim or 2% milk.
    • 1 egg large egg
    • ½ cup golden wheat flour also known as white whole wheat flour. Can use all-purpose flour instead.
    • 2 teaspoon baking powder do not use baking soda instead.
    • 1 teaspoon cinnamon I love the flavor of Saigon Cinnamon from Costco.
    • ¼ teaspoon salt up to ½ teaspoon.

    Instructions
     

    • Mash banana in a medium mixing bowl. A food masher or the back side of a fork works well for this.
      1½ banana
    • Stir the oats and milk in with the banana.
      ½ cup quick oats, ¾ cup milk
    • stir in the remaining ingredients in the order listed. Let the batter set while the skillets heat up over medium heat.
      1 egg, 2 teaspoon baking powder, ¼ teaspoon salt, ½ cup golden wheat flour

    Cooking Mini Banana Pancakes

    • Pour ½ tablespoon of batter to form each mini pancake. I get about 9 mini pancakes to fit on my large skillet and square griddle pan. Cook until bubbles stop forming on top of the pancakes, for about 2 minutes.
    • Flip each mini pancake over and continue to cook for another minute or two.
    • Remove from the pan and serve!

    • One-and-a-half bananas is exactly enough. When I used one banana there wasn't much banana flavor and when I used two bananas, the banana flavor was too strong.
    • Do not use baking soda to make these pancakes. I tried to create this recipe using a combination of baking powder and baking soda and it tasted terrible.
    • There is no need to add sugar, maple syrup, or honey to this mini banana pancake recipe. I made these pancakes using maple syrup and they were way too sweet. The overripe banana adds enough sweetness.
    • Using two skillets to cook more pancakes at once saves so much time.
    • If you substitute egg whites for a whole egg, the mini pancakes will be pale in color, not golden brown.
    • Reduce to medium-low heat if the mini banana pancakes are cooking too fast.
    • There is no added sugar, so they are mildly sweet. Feel free to stir a tablespoon of pure maple syrup into the batter for sweeter pancakes.
    • Serve mini pancakes with slices of banana or berries, a side of nut butter or sliced almonds, and a drizzle of maple syrup, a smear of honey, or a dusting of powdered sugar.
