    Easiest Avocado Toast with Tomato

    This recipe for the BEST Avocado Toast with Tomato is one of the easiest foods to make that is absolutely delicious and feels so gourmet!

    I recently took a group of teenage girls from church out for breakfast at a local restaurant and one of them ordered their avocado toast saying, "it's so good here!" Of course, I was intrigued, wondering what made it so good.

    I just had to smile when I saw how they serve it. It was avocado toast served on a slice of toasted bread and topped with a slice of tomato. This was a perfect reminder to keep flavors simple for kids, including teenagers. 😅

    Take note of the types of foods your kids and their friends order when eating out. I can't tell you how many times I've taken kids out only for them to order pizza, mac and cheese, a Caesar salad, or a cheeseburger, eggs and toast, a muffin, or avocado toast. I mean, how much simpler can it get? 😉

    Just like with this avocado toast, I never would have thought of placing a single tomato slice on top if I hadn't been out to eat with a teenager who ordered it because it was her favorite.

    So, next time you make a meal, remember that it's okay to keep it simple. In fact, your kids may consider your version of simple to be super gourmet. 😉

    🥖Recipe Variations

    While this tomato avocado toast recipe is super tasty as is, there are so many delicious ways to change it up!

    • Top the avocado and tomato with slices of hard-boiled egg.
    • Add microgreens, crumbled feta cheese or goat cheese, and a drizzle of balsamic glaze or thick balsamic vinegar.
    • Top it with burrata.
    • Dice up the tomato instead of using slices and make a caprese topping using mozzarella and fresh basil to serve it like caprese bruschetta but with avacado.
    • Dice up the tomato and add diced hard-boiled egg on top of the avocado toast.
    • Add a drizzle of extra virgin olive oil and little bit of red pepper flakes for more moisture and some spice.
    • Add a squeeze of lime juice, a drizzle of olive oil, and fresh cilantro for more of a Southwest flare.
    • Add another layer of veggies like roasted beets or sweet potato. Yum!
    • Sprinkle on hemp hearts for more texture, fiber, and omega-3 fats.

    • Bread Sandwich bread or something heartier like sourdough bread or whole grain bread. You pick! Bread is an excellent source of carbohydrates and, if made with whole grains, fiber.
    • Avocado High in fiber and mono-unsaturated fats (aka healthy fats). Use avocado that is at room temperature.
    • Tomato A ripe tomato will look and taste the best. Tomatoes contain a variety of nutrients including antioxidant-rich phytochemicals, potassium, and lycopene. Regular slicing tomatoes, Roma tomatoes, heirloom tomatoes, or even grape tomatoes will work.
    • Seasonings There are so many delicious ways to season avocado toast with tomato. I prefer to keep it simple with salt and black pepper. And if I'm feeling extra fancy, I'll add microgreens and balsamic glaze or roasted beets. My oldest daughter will only eat it (and LOVES it) when topped with Everything Bagel Seasoning.

    🍅How to Make Avocado Toast with Tomato

    1. Lightly toast the slices of bread.
    2. Mash the flesh of a creamy avocado and spread it on top of the toasted bread slices.
    3. Lay one or two slices of tomato on top of the avocado.
    4. Top with a pinch of salt and pepper or a few pinches of everything but the bagel seasoning. Our favorite brands of Everything Bagel Seasoning are from Trader Joe's or Noble Made.

    📱Helpful Tips

    • Use whatever type of bread you have. To serve this appetizer style or just for smaller portions, slice a baguette instead of a larger loaf of bread.
    • Avocado and tomatoes can be found in the produce aisle of the grocery store.
    • A lot of recipes will suggest layering slices of avocado on top of toast when making avocado toast. I only recommend doing this if you really like avocado and are really hungry. This is because the flavor of avocado stands out more when served in slices and it is very filling. This tip is coming from someone who doesn't like avocado by itself but really likes avocado toast, lol. 🙋‍♀️
    • If you are using slices of traditional sandwich bread to make avocado toast, you'll want to mash the avocado in a small bowl or on a plate before spreading it on your toast.
    • If you don't have a toaster or toaster oven, you can lay the slices of bread on a baking sheet and toast in the oven at 350 degrees for 8-10 minutes, flipping the slice of bread over about halfway through.

    Questions You May Have

    How can you tell if an avocado is ripe?

    Use your thumb or fingers to apply gentle pressure to an avocado to determine if it's ripe. A ripe avocado will give a little when gentle is applied. A firm avocado is underripe, while a mushy or very soft avocado is overripe.

    Another test you can use is to try to flick the stem off of the avocado. If it comes off easily and reveals green-yellow flesh, it's ripe. If the stem doesn't come off easily, it's not ripe enough. And if the stem comes off easily but shows dark flesh where the stem was, it's likely bruised or overripe.

    Should I cook the tomatoes first?

    No, this recipe calls for fresh tomatoes. However, if you love the taste of roasted tomatoes or have leftover roasted tomatoes that you want to use up, you can go ahead and use them 🙂

    What to pair with avocado toast?

    I love to pair avocado toast with burrata or scrambled eggs for breakfast or brunch. A fried egg would work, too!

    When I make avocado toast for lunch, I like to have it with a small strawberry goat cheese salad and a hard-boiled egg for extra protein. It might sound like a light lunch, but it's actually very filling. Yum!!

    Avocado toast with tomato will also taste delicious served with a veggie or lentil soup, roasted beets and feta, and so much more!

    Equipment

    • 1 Toaster or Toaster Oven
    • 1 Knife one sharp knife for slicing the tomato and cutting the avocado in half.

    Ingredients
      

    • 3 slices Sourdough Bread Or sandwich bread.
    • 1 Large Avocado Ripe. One large avocado or two small avocados.
    • 1 Tomato Ripe. Vine-ripened tomato has the best flavor.
    • 3 pinch salt or Everything Bagel Seasoning that already has salt in it.
    • 3 pinch pepper

    Instructions
     

    • Lightly toast the slices of bread in a toaster or toaster oven.
    • Slice the tomato while the bread is toasting.
    • If using a hearty bread, scoop out the flesh of a large avocado, putting equal amounts on each piece of toast. Use the back of a fork to smash and spread the avocado over each piece of toast.
      If using toasted sandwich bread, scoop out the flesh of a large avocado onto a plate or bowl. Use the back side of a fork to smash the avocado just enough to make it spreadable. Then use the back of the fork to spread the smashed avocado over each piece of toast.
    • Top the avocado with a pinch or two of salt and pepper.
    • Lay one or two slices of tomato on top of the avocado layer.
    • Top with another pinch or two of salt and pepper OR Everything Bagel Seasoning.
    • Serve and enjoy!

    • Use a sharp knife to slice the tomato. 
    • Use a ripe avocado. It will mash better.
    • There are so many types and sizes of bread out there now, which makes it hard to know exactly how much avocado you will need. For slices of a large loaf of sourdough, you may want to cut the slices in half after spreading the avocado on and considering each half 'a slice.' 
    • Use any type of bread to make this recipe. I prefer to use a hearty bread like sourdough so that I can just mash the avocado on top of the toasted bread.
    • If you use toasted sandwich bread, I suggest mashing the avocado on a separate plate and then spread it on the toast.
    • Play around with the seasonings. My oldest daughter absolutely loves avocado toast topped with everything bagel seasoning, while I prefer just salt and pepper.
    • Just because your kids don't like plain avocado doesn't mean they won't like avocado toast (I say this from personal experience, lol ;).
