1 Knife one sharp knife for slicing the tomato and cutting the avocado in half.

3slices Sourdough BreadOr sandwich bread.
1Large AvocadoRipe. One large avocado or two small avocados.
1TomatoRipe. Vine-ripened tomato has the best flavor.
3pinchsaltor Everything Bagel Seasoning that already has salt in it.
3pinchpepper
Instructions
Lightly toast the slices of bread in a toaster or toaster oven.
Slice the tomato while the bread is toasting.
If using a hearty bread, scoop out the flesh of a large avocado, putting equal amounts on each piece of toast. Use the back of a fork to smash and spread the avocado over each piece of toast.If using toasted sandwich bread, scoop out the flesh of a large avocado onto a plate or bowl. Use the back side of a fork to smash the avocado just enough to make it spreadable. Then use the back of the fork to spread the smashed avocado over each piece of toast.
Top the avocado with a pinch or two of salt and pepper.
Lay one or two slices of tomato on top of the avocado layer.
Top with another pinch or two of salt and pepper OR Everything Bagel Seasoning.
Serve and enjoy!

Use a ripe avocado. It will mash better.
There are so many types and sizes of bread out there now, which makes it hard to know exactly how much avocado you will need. For slices of a large loaf of sourdough, you may want to cut the slices in half after spreading the avocado on and considering each half 'a slice.'
Use any type of bread to make this recipe. I prefer to use a hearty bread like sourdough so that I can just mash the avocado on top of the toasted bread.
If you use toasted sandwich bread, I suggest mashing the avocado on a separate plate and then spread it on the toast.
Play around with the seasonings. My oldest daughter absolutely loves avocado toast topped with everything bagel seasoning, while I prefer just salt and pepper.
Just because your kids don't like plain avocado doesn't mean they won't like avocado toast (I say this from personal experience, lol ;).
Recipe Variations:
Top the avocado and tomato with slices of hard-boiled egg.
Add microgreens, crumbled feta cheese or goat cheese, and a drizzle of balsamic glaze or thick balsamic vinegar.
Top it with burrata.
Dice up the tomato instead of using slices and make a caprese topping using mozzarella and fresh basil to serve it like caprese bruschetta but with avacado.
Dice up the tomato and add diced hard-boiled egg on top of the avocado toast.
Add a drizzle of extra virgin olive oil and little bit of red pepper flakes for more moisture and some spice.
Add a squeeze of lime juice, a drizzle of olive oil, and fresh cilantro for more of a Southwest flare.
Sprinkle on hemp hearts for more texture, fiber, and omega-3 fats.
