A Goat Cheese Sandwich made with roasted sweet potato, fresh arugula, lemon, and creamy goat cheese in 15 minutes - an easy & delicious way to get more veggies in any day of the week!

If you ask me, goat cheese is so underrated. I mean, the fact that it's a little sweet, slightly tangy, and perfectly creamy means that it can be used to enhance the flavor of so many things - especially veggies.
After making strawberry goat cheese salad on repeat all spring, I'm so ready for the comforting combo of warm goat cheese and roasted veggies once summer and fall veggies are abundant.
I've been loving this goat cheese sandwich made with sweet potatoes and arugula but love it just as much when I use whatever roasted veggies I have on hand.

Why You'll Love This Goat Cheese Sandwich
- Easy Recipe Using a mandoline to slice sweet potato ensures they are sliced thin enough (which means they'll cook faster) and saves time. The rest is a matter of tossing and assembling.
- Healthy Lunch 13g protein, 5g of fiber, and a variety of phytonutrients. Of course, these are estimates, so can vary depending on the type of bread and exact amounts you use.
- Vegetarian
Ingredient Notes

- Bread Sandwich bread, sourdough bread, whole grain bread - it all works!
- Goat Cheese Use Chevre, the creamy kind of goat cheese. I've been using cracked pepper Chevre from a local farm and it is divine!
- Sweet Potato Sweet enough to balance out the bitterness from arugula and tang from goat cheese.
- Lemon A little bit of fresh lemon juice tossed with the arugula. If you have leftover lemon salad dressing (with garlic, hello yum!), use that instead.
- Honey (optional) If you prefer foods on the sweeter side, definitely drizzle a small amount of honey on top of the goat cheese before layering your veggies.
How to Make a Goat Cheese Sandwich

- Toss arugula in a fresh lemon (see notes).
- Roast thin slices of sweet potatoes in the oven for 10 minutes.
- Spread goat cheese on toasted bread while it's still warm, then drizzle with honey (optional).
- Layer sandwich & enjoy!
Recipe Variations
- Change up the Veggies Any kind of roasted veggies will work here. Roasted beets, butternut squash, eggplant, you name it!
- Fresh Herbs Roast fresh herbs with the sweet potato or add a few leaves of fresh basil.
- Balsamic Glaze Or balsamic reduction in place of honey.
- Microgreens Mix with arugula for more nutrient variety.
- Roasted Peaches Use in place of sweet potato to make this sweeter and less savory.
- More Protein Add prosciutto, hard-boiled egg, or thin sliced deli meat for a protein boost.
Dietitian Tip
Finding new ways to serve veggies, like layering them in a sandwich, can bring enjoyment and variety back to meals, especially when you need a break from salads.
