Instructions
Preheat your oven to 425 degrees Fahrenheit.
Line or grease a large baking dish or sheet pan.
Slice each peach in half and remove the pit and stem.

Slice the peaches and lay the peach slices in a single layer on the baking dish. To save time, I slice the peach halves over the baking dish and spread them out as I'm slicing them. *Skip this step and see notes section if you will be roasting peach halves instead of peach slices.
Use a basting brush to cover the top and sides of each peach slice with a light layer of maple syrup.

Optional step: sprinkle granola or pumpkin seeds on top of some of the peach slices.
Place in the preheated oven and roast at 425 degrees for 15 minutes.
Notes
Line the baking dish with parchment paper to make cleanup easy.
If your peaches aren't quite ripe, let them sit out at room temperature for a day or two before roasting.
Do not pour the maple syrup directly on the peaches. Instead, pour the maple syrup in very small bowl then use a basting brush to brush a light layer of maple syrup on the peach slices before roasting.
Roasting peach halves will take longer than roasting sliced peaches. To roast peach halves, lay the peach halves skin side down. Brush a light layer of maple syrup on all sides of the peach half. Roast for 25 minutes. Optional: fill the center of each peach half with granola before roasting.
Allow leftover roasted peaches to cool to room temperature before storing refrigerated in an airtight container.
To roast peaches in an air fryer, place the baking rack in the lowest position and reduce the cooking temperature to 350 degrees. Cook for 10 minutes.
