Strawberry-Banana Baked Oatmeal
This baked oatmeal recipe is healthy, delicious, and easy to prepare!
Servings 8 servings
- 2 ½ cups rolled oats
- 1 cup milk I use skim milk.
- 1 cup sliced strawberries
- 2 bananas, small and overripe about ¾ - 1 cup, mashed
- 1 egg lightly beaten
- 3 tablespoon maple syrup* pure maple syrup
- 2 tablespoon olive oil extra virgin
- 1 teaspoon baking powder aluminum-free
Preheat oven to 350° Fahrenheit
Lightly oil an 8x8 baking dish
Spread strawberry pieces out to cover the bottom of the baking dish
Mix the rest of the ingredients together in a medium mixing bowl
Pour mixture into the baking dish, covering the layer of strawberries
Bake in the oven for 25 minutes. Let cool slightly. Serve and enjoy!
*Maple syrup is optional. Feel free to leave this ingredient out and add some only as needed when serving, depending on the desired level of sweetness
A 9x9 baking dish would work just as well
