Packed lunches have never been so easy! This chicken wrap is made with 3 ingredients, and it only takes a few minutes to make. If you slice it into smaller pieces, it quickly becomes a turkey roll up recipe.
2slicesturkey breastCan use sliced chicken instead. I use Organic Sliced Turkey Breast from Trader Joe's. Can substitute with sliced chicken, if it's what you have.
¼cupkaleUse curly kale. Washed and with the thick ribs removed.
½Whole Wheat Lavash Flatbreadcan substitute a medium sized flour tortilla
Instructions
Lay the flatbread out flat.
Lay one slice of chicken breast flat on the center of the flatbread.
Place kale on the center of the slice of chicken.
Lay the second slice of chicken on top of the kale.
Start on the short side of the flatbread and roll it tightly.
Notes
Sliced chicken can be used in place of turkey if it's what you have. The flavor and texture will be similar.
For an even heartier wrap and to add more protein, add a third slice of turkey or a slice of cheese.
If you can only find large square pieces of Lavash flatbread without a perforation in the middle, use kitchen shears to cut it in half down the middle, to create two pieces.
Tuscan kale or spinach can be used in place of curly kale, and it will still hold up well.
If you use lettuce instead of a dark green, either assemble the wrap the same morning that you are packing lunches or right before serving it to keep it from getting soggy.
Start on the short side of the flatbread when rolling this into a wrap.
If you are looking for additional ingredients for a healthy chicken wrap, a light spread of guacamole, or a tiny drizzle of a lemon-garlic vinaigrette would add nice flavor.
If your kids won't accept a wrap without mayo or mustard, add some. It's okay!
When sending this for school lunch, be sure to pack it in an insulated lunch bag with an ice pack to keep it cold.
